Healthy salad two is a compilation of some of my favorite things: quinoa (pronounced Keen-wah), avocado, radish, and edamame. I also added basil, cumin, and lemon juice to make it extra tasty. It’s packed with protein and healthy fats and the radishes offer up a nice crunch. I first discovered quinoa when I was in Peru in 2009, it’s a grain packed with protein and fiber and it’s a great alternative to rice.
In a bowl, combine 1 cup of cooked quinoa, 1 cup edamame (I used frozen edamame), sliced avocado, handful of thinly sliced radishes, chopped basil, 1 tbspn cumin, juice of 1/2 lemon, 1 minced garlic clove, 1/3 cup olive oil, salt and pepper.
