Winter is so dreary and it’s easy to slip into a comfort food eating binge. I decided to create beautiful and delicious salads this week and this is the first I came up with. I don’t know about you but I eat with my eyes first so it has to be visually appealing. I loved that the fennel and pomegranate seeds gave this salad a crunch while the blood orange was the perfect amount of acidity to the extra virgin olive oil I used to dress it up. I just love blood oranges, they are gorgeous and really tasty. Here’s to healthy eating!
