I’m on week 4 of the Physique 57 8 week challenge! The last 4 weeks have gone by really fast and what seemed like a long committment at first, doesn’t seem that long now. I’m tring my best to eat clean and I can happily report that I’ve been pretty successful. I feel light, energized and ready to tackle 2014. I do need a little bit of an indulgence from time to time and my favorite way to splurge is on chocolate. I don’t want to ruin all of my efforts so I came up with this vegan chocolate crunch bar recipe. It tastes deceptively like a candy bar without all the sugar and processed ingredients. So you curb your cravings without sacrificing your clean eating. This recipe is super easy to make because there’s no baking involved. Who said eating desserts was so bad?
- 1/2 cup coconut oil (liquid is better but I used solid oil)
- 1 teaspoon vanilla extract
- 3 tablespoons unsweetened cocoa powder
- 3 1/2 tablespoon pure maple syrup
- pinch of sea salt
- 1/2 cup puffed brown rice cereal
In a large bowl, whisk all the ingredients together except for the cereal until it’s smooth. Add the cereal and stir until combined. I spooned the mixture into a small baking dish and smoothed the top so it was all even. I put the chocolate in the freezer for about 3 hours. Once the chocolate was hard and chilled, I cut them into squares with a knife. I stored the rest in a plastic bag in the freezer.
