The Best Blueberry Cobbler

Last week, I hosted a Southern themed party and I thought the best way to end the night was with this blueberry cobbler (recipe here).  Blueberry cobbler is my favorite dessert to make for the summer because it’s easy and I love using fresh blueberries.  I’ve tried many blueberry cobbler recipes but in my opinion, this one is the best.  You can taste the lemon zest in the dough which pairs perfectly with the sweet blueberries.  The best part about this dessert is that you don’t need any fancy pie dough making skills and the whole dessert takes about 20 minutes to make.  I served the cobbler warm with vanilla ice cream on top.  It was a hit at the party.

You will need:

  • 2 pints fresh blueberries (I used 3 pints)
  • 1/3 cup plus 1/4 cup granulated sugar
  • 1 1/2 cups plus 1 tablespoon all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon grated lemon zest
  • 6 tablespoons cold unsalted butter, cut into pieces
  • 2 cups heavy cream

1. Preheat oven to 375° F. In a 9-inch pie pan, toss the blueberries, 1/3 cup sugar, and 1 tablespoon flour.

2. In a medium bowl, combine the 1 1/2 cup flour, 1/4 cup sugar, baking powder, salt, and lemon zest.

3. Add the butter and blend with your fingers.

4. It should look like coarse crumbs.

5. Add 3/4 cup plus 2 tablespoons cream and mix until a shaggy dough forms.

6. The dough should look like this.

7. Drop mounds of dough over the blueberry mixture.

8. Bake for 35 – 40 minutes until the blueberries bubble and the top is golden.

9. Serve warm with vanilla ice cream.
