I love quinoa. I eat it pretty much everyday but mostly as a savory side dish. I thought it would be fun to try and make an oatmeal-type breakfast with quinoa. I made the quinoa similar to how I make it regularly with water but in the last 2 minutes, I added about 1/4 cup of almond milk to thicken it up. I topped the quinoa with shredded coconut, cinnamon, agave nectar and blackberries. It was a delicious and nutritious breakfast that was a nice break from the oatmeal routine.
