Quick Dinner Idea

Yesterday was our first taste of summer.  I was running around all day doing errands, working downtown and sweating like a crazy person.  When I got home at 7 pm, the last thing I wanted to do was make dinner.  However, I didn’t want to get take out or eat anything too heavy so I created this salad with most of the items from my pantry.  I already had peeled raw shrimp in the refrigerator.  I hate to sound like Rachael Ray but this meal took me less than 30 minutes to make.  The salad had some of my favorite things in it like hearts of palm, black beans, corn and avocado.  I made the dressing with lime juice, extra virgin olive oil and a little bit of agave nectar.  I’m all about fast, healthy and delicious meals in preparation for bikini season!
