Protein pancakes, I know that sounds like an oxymoron. My favorite weekend ritual is to make and to eat pancakes. It’s my one carb heavy indulgence for breakfast. I make so many different kinds…blueberry, chocolate chip, lemon ricotta, multigrain, and the list goes on. Recently, I wanted to make a healthier more protein packed pancake since summer is just around the corner. I made these and they were actually really delicious. I mixed 1/2 cup quick cooking oats, 4 egg whites, 2 tablespoons or so of almond milk, 1 teaspoon of cinnamon, and 1 teaspoon of vanilla extract. I cooked the pancakes on a griddle like normal pancakes. I topped with agave nectar and berries. These pancakes satisfy my pancake craving while getting my protein intake at the same time. Now what’s more beautiful than that?
