For my girlfriend Grace’s birthday, I wanted to make her something very special. I had been scouring Pinterest for inspiration when I stumbled upon this pink ombre cake which led me to this cute blog Call Me Cupcake. I used Linda’s recipe here which was easy but it did take me a couple of hours to make. Her recipe called for 5 – 6 inch layers. I didn’t have 6 inch cake pans so I made 4 – 9 inch layers. I was afraid the cake would be ginormous but it turned out to be perfect. Because I made 4 layers and used bigger cake pans, I couldn’t rely on the recipe for the number of drops of pink food coloring to put in each layer. So I just winged that part. For the frosting, I decided to stick to the recipe and make the swiss meringue buttercream which I had never made before. Reading the recipe, I’m not going to lie, I was scared that I had to whip egg whites with sugar over a double-boiler. On a side note, I halved the recipe and there was more than enough buttercream. It was so much easier than I thought it would be! The cake was super moist and had a very nice vanilla flavor. The cake went perfectly with the swiss meringue buttercream. When Grace saw the cake, she immediately said that it looked like Gwen Stefani’s wedding dress and I couldn’t agree more. Happy Birthday Gracie!
