I was making my usual protein shake for breakfast when one day, I decided to add a frozen banana instead of frozen blueberries. I loved the consistency. I thought it would make the perfect “ice cream” because it was sweet, creamy, and the perfect frozen treat. I swear it tastes like real ice cream! You would never know it was just frozen bananas, almond milk and peanut butter. It’s the perfect dessert when you’re trying to be fit and healthy but you still want ice cream. It’s also a great way to use up those brownish ripe bananas.
- 2 ripe bananas cut into small pieces
- 1/4 cup unsweetened almond milk
- 1 – 2 tablespoons peanut butter
- Roasted peanuts
Cut the bananas into small pieces. Place the banana pieces in a bowl, cover with plastic wrap and freeze for at least 4 hours or until the bananas are frozen. In a food processor, puree the frozen bananas, unsweetened almond milk and peanut butter until smooth but not watery. In the meantime, crush the roasted peanuts. If the ice cream starts to melt, put it back in the freezer for 30 more minutes. When you’re ready to serve, top it with the roasted peanuts.
