Paella Valenciana

paella1Last night, I made a Spanish themed dinner for a stay-at-home date night.  Why a Spanish theme?  Well, it really started with me wanting to make sangria and making paella just made sense.  Is making paella the easiest thing in the world?  No, there’s effort.  Is it a 30 minute dinner?  No, but for the first time making paella from scratch, I was sort of surprised that I made it through with virtually no problems.  I used this incredibly easy recipe by Seamus Mullen from Food and Wine magazine.  You cook the rice similar to the way you make risotto and since I’ve made risotto many times, I knew it was the easiest route.  I have a few confessions to make.  I’m way too type A sometimes.  I HAD to buy the paella pan to make the paella.  Luckily for me, it was on sale for $20 from Sur La Table.  For some reason, the 5 supermarkets around my neighborhood didn’t have mussels or chorizo so I went uptown to get them.  I couldn’t get myself to make paella without chorizo or mussels.  As my boyfriend said, I was getting obsessed with making the perfect paella.  I hate to toot my own horn but it was amazing!  Sometimes making the effort pays off in the end.  Sangria recipe to follow.
