Kale and Sweet Potato Salad

My two favorite things to eat are kale and sweet potatoes so it was natural to create a salad that had both in it.  I roasted the sweet potatoes for 20 minutes in the oven until they were tender.  They tasted a lot like baked sweet potato fries.  I tossed the kale in olive oil, white wine vinegar and S&P.  I also added roasted almonds for an added crunch.  What I love about this salad is that it’s flavorful without a lot of ingredients and it’s healthy.
