Kalbi Ssam

kalbissam1Now that summer is just around the corner, I’m thinking of parties and outdoor grilling.  My favorite thing to make when I’m entertaining is Korean BBQ.  Read here for my mom’s Kalbi recipe for a step-by-step guide.  When I’m strapped for time and I can’t go to the Korean market, I buy skirt steak and make a short version of the kalbi marinade.  Ssam in Korean means “wrapped.”  You usually wrap meat, rice, vegetables, and a condiment in a lettuce wrap.  I lay out all the components on a table and everyone can make their own lettuce wraps.  It’s the Korean version of a taco station.  It’s always a crowd pleaser in our household.

kalbissam2For the skirt steak you will need (for 4 people):

  • 2 lbs of skirt steak
  • 1 cup soy sauce
  • 1/4 cup agave nectar
  • 1/3 cup sesame oil
  • salt and pepper
  • 3 garlic cloves
  • 1 tablespoon rice wine vinegar

For the Ssam

  • Butter lettuce
  • Radish
  • Kimchi
  • Hot peppers
  • Brown rice
  • Gochujang

Marinade the skirt steak for at least 2 hours.  I usually make the marinade in the morning before I go to work. When you’re ready to grill the skirt steak, bring the meat to room temperature for about 3o minutes.  I grill the skirt steak to a medium rare about 4 minutes per side.  I cut up the skirt steak into small cubes.  I put all the components on the table and there you go, ssam!
