Host a Brunch

Last weekend, I hosted a brunch with my girlfriends via this post.  It wasn’t just an ordinary brunch, we also did some art.  I wanted the brunch menu to be light and reminiscent of a cocktail party.  Since the ladies would be mingling and drinking their mimosa, I wanted the food to be bite size and easy to eat.  I decided to make mini multigrain pancake and strawberry skewers, mini frittatas with parmesan and peas and smoked salmon and cream cheese crostinies.  I don’t know whether it was because everything was small or because I served the brunch on cake stands but everyone was crazy for the food.  I made everything in less than 2 hours.  After hosting this brunch, I thought it was a great way to gather your friends together for a low budget afternoon.  The best part is that you don’t have to wait on long lines!

brunch2You will need: Multigrain pancake mix (I used Arrowhead Mills), strawberries, maple syrup, short skewers (I found them at Sur La Table).

After I made the pancake batter according to the directions, I made silver dollar pancakes. I alternated between a strawberry and pancake on the skewer. Serve with maple syrup.

brunch3You will need: I used 10 eggs to make 48 mini frittatas, 1/2 cup grated parmesan, 1/2 cup defrosted peas, 1/3 cup whole milk, salt and pepper.

After I whisked all the ingredients together, I poured the egg mixture into a greased mini muffin pan and baked in a 375 degree oven for 10 minutes. I let the frittatas completely cool before I popped them out and served with toothpicks.

brunch4brunch5You will need: Multigrain baguette, smoked salmon, 6 ounces softened cream cheese, chives, 1 teaspoon of whole milk.

For the crostini, I cut the baguette into thin slices and brushed olive oil on top. I baked them in the oven for 15 minutes at 375 degrees or until they were golden brown.

For the cream cheese spread, I mixed the cream cheese and milk in the mixer until the cream cheese was smooth. I added chopped chives and seasoned with salt and pepper.

To assemble, I spread a little bit of the cream cheese mixture on the crostini and topped with a slice of smoked salmon. I finished with a little piece of chive on top.
