Grilled Peaches with Mascarpone

I’m a dessert girl.  A day is not complete without a sweat treat.  When I went to the farmer’s market recently, the scent of the peaches were intoxicating.  Since peaches are in season right now in New York, I wanted to make a dessert with peaches.  I wanted the peaches to be the star of the dessert so I grilled them to bring out more of their sweetness.  I flavored the mascarpone cheese with honey which was creamy and sweet.  It was the perfect accompaniment to the grilled peaches.  To finish the dessert, I added chopped pistachios for a crunch.  Mmmmmm…it was so good and the perfect way to end a hot summer day.

 1. I used three yellow peaches.

 2. I sliced them in half and removed the pits.

3. While the peaches were grilling, I added about 2 teaspoons of honey to 1/2 cup of mascarpone cheese.

4. I added chopped pistachios on top and garnished with mint.
