The older I get, the wiser I get about my food choices. I’m just not willing to eat crap anymore. I don’t want to eat processed and hormone induced foods-ick. That unfortunately also includes desserts. I’ve been doing a lot of experimenting lately and I think these frozen fruit pops came out really nice. They kind of remind me of those frozen fruit bars without all the sugar. They are very easy to make and perfect for those hot summer days.
- Ice pop molds
- 2 cups frozen berries (I used blueberries)
- 1 – 1 1/2 cups coconut milk
- 2 tablespoons agave nectar
- 1/2 cup frozen mango (optional)
Puree the frozen berries with the coconut milk and agave nectar. Immediately pour the mixture into the ice pop molds. I also made mango and layered it at the bottom. It takes about 2 hours to freeze. When you’re ready to eat it, run hot water over the mold until you can release the ice pop from the mold.
