I usually gain the summer 10 from all the BBQ’s, meeting friends for drinks, and over indulging in ice cream. After Labor day, I try to eat healthy for about a week (which I usually fail) just in time for fall flavors. The challenge was to create a delicious and healthy dinner that doesn’t take a long time. I like low maintenance meals that only have about 5 ingredients or less. We were going on vacation so I used all the things I had left in my refridgerator. This is how I made a healthy and delicious halibut and quinoa dinner in just 15 minutes. Really, there are no excuses to get take-out!
1. Preheat oven to 400 degrees. Follow directions on package to cook quinoa. I like to use chicken broth instead of water to add more flavor. I bought a little over 1 lb of halibut and cut them into 3 filets that were each about 5 – 6 ounces.
2. I placed each filet in tin foil big enough so you could fold it to bake. I seasoned it with salt and pepper, added rosemary and thyme.
3. Then 3 lemon slices and a little bit of fresh lemon juice.
4. I added the sliced cherry tomatoes, extra virgin olive oil and a splash of the sauvignon blanc I was drinking.
5. Fold the tin foil so it looks like the above photo and bake for 15 minutes in the oven. When the quinoa is ready, use a fork to fluff the quinoa.
6. Put the quinoa on the plate first so it soaks up all the juices. Then the fish then the garnishes. There should be a lot of juice in the tin foil so don’t be shy, pour it onto the fish. Bon Apetit!
