Chocolate Dipped Biscotti

I’m always looking for a sweet treat with my afternoon coffee.  I had a craving for a great biscotti and I noticed that every time I went to a coffee shop, I would scan the counter for biscotti.  Biscotti, which are twice-baked Italian biscuits, are perfect for dipping into coffee or tea.  Since the search failed, I decided to make them at home.  I used this recipe here but dipped them in chocolate and sprinkled crushed pistachios on top.  When I took a bite into the chocolate and pistachio, I thought I was in heaven.  The biscotti wasn’t too dry but it still had a soft texture which was nice.  It was still perfect for dipping.  The biscotti was a perfect treat to beat the afternoon slump.
