I’m on a let’s-make-everything-mini-and-bite-size kick as evidenced by these cookies, donuts, and cupcakes. Ever since I was a little girl, I’ve had this tradition of eating pancakes on the weekends; chocolate chip are even better. It’s something I look forward to every weekend. But let’s face it, eating pancakes is really like eating dessert for breakfast. I wanted to still be able to enjoy my weekend indulgence without going overboard. This is where the bite size pancakes came about. I used Bakerella’s recipe here because it was super easy and I already had all the ingredients. I let myself have 2 pancakes for breakfast which satisfied my craving without the carb overload. On a side note, my mini muffin pan has proved to be a great investment for the kitchen!
