Avocado Toast


I’ve been seeing avocado toast on a lot of menus lately but the one that keeps me dreaming is the one I had at Cafe des Epices in Marrakech (read here).  Avocado toast makes the perfect breakfast, brunch, lunch and snack.  Since the recipe only has about 6 ingredients it’s also very easy to make.  This is why I love food, it transports you back to an exotic location and conjures up great memories.  Whenever I have a craving for Marrakech, I make this avocado toast.  When I eat it, it reminds me of that first day wandering the alley ways of the Souk when I desperately needed a snack.  Biting into the pillowy soft bread and creamy avocado, it was the best thing I ate during that trip.


Because there are only 6 ingredients, you have to make sure they are all really good quality.

You will need:

  • 2 ripe avocados,
  • Fresh bread (I bought mine at Amy’s Bread)
  • 1 lemon
  • Kosher salt
  • Paprika
  • Extra virgin olive oil (optional)


After you pit and scoop out the avocados, mash them in a bowl, add about a teaspoon of kosher salt, and the juice of 1/2 a lemon.  Continue to mash until the avocados are smooth and creamy.


Slice the bread.  You can toast it if you like but I don’t because it reminds me of the avocado toast in Marrakech where the bread was soft.  Spread the avocado onto the bread.


Sprinkle paprika on top and serve with extra virgin olive oil.
