I use almond milk for my protein shakes but that’s about it. I was so excited when I saw this recipe for almond milk rice pudding in January’s issue of Food & Wine magazine. I also LOVE rice pudding. I love how creamy and comforting it is. I love Rice to Riches in the city which serves many flavors of rice pudding. Rice pudding is also really easy to make. The process is very similar to risotto. I added a vanilla bean to the rice pudding to add extra flavor and topped it off with blueberry compote!
