Acai Bowls


I was ordering a green juice at Juice Generation a few weeks ago and I noticed that a lot of people were ordering these bowls with fruit and various toppings.  They were acai bowls which I’ve come to learn are thicker smoothies made with acai (ah-sigh-ee), an amazonian berry, as the main ingredient.  They looked so delicious I decided to make my own with the ingredients that I wanted to eat.  I went to my local health food store and bought frozen acai berry.  Sambazon seems to be the dominant brand for all things acai.  They even have a recipe for acai bowls on the back of the package so I bought all the ingredients right then and there.  Acai bowls are as easy to make as smoothies and a delicious addition to your breakfast rotation.  The recipe below is my favorite combination of ingredients but you can add or eliminate any of them.


Serves 2 – Ingredients for the bowl: 2 frozen unsweetened Sambazon acai berry | 1/4 avocado | 1 cup of greens | 1 – 1.5 cup of unsweetened almond milk | 1/2 banana | 1/4 cup frozen blueberries | Toppings: raspberries | coconut shavings | gluten free granola by Purely Elizabeth | banana | kiwi


Directions:  Blend all the ingredients together in a blender.  I added a cup of almond milk first and then added more as necessary.  It should be thicker than a smoothie.  Top with coconut shavings, granola, and fruit.
