babycakes1Whenever I bake for parties, there is always one or two people who sit in the corner looking longingly at the baked goods.  Lately, I’ve been getting more requests to bake gluten-free and dairy free due to allergies.  Since it’s a new year, I decided to do some research and teach myself how to bake without traditional ingredients like butter, cream, and flour.

I’ve had vegan and gluten free baked goods before and they never tasted good.  They always tasted like there was something missing like flavor!  I did remember from my mental rolodex, Babycakes in the Lower East Side.  I was told that they have the best cupcakes in the City.  This is a big statement considering how many bakeries are in the city.  I had to go and taste it for myself, this was research of course!

I visited on a holiday morning and the three ladies inside were busy prepping the baked goods for the day’s sales.  I asked the lovely lady in the front what she recommended and she suggested the chocolate cupcake, doughnut, and a banana loaf because it was just baked and warm.  I threw in a spelt vanilla cupcake for good measure.  I just loved the cozy tchotchke filled bakery.

I brought all of my Babycakes goodies home to taste them without distraction.  I want to preface that everything was vegan, gluten and sugar free.  I was really scared.  My first bite was of the banana loaf.  How could something without butter be so moist?  Oh, because I’m a control freak, I also bought the recipe book to see what ingredients Erin McKenna (Chef and Founder) used.  The cupcakes were unbelievably moist but what was more shocking to me was how good the frosting tasted.  Traditional frosting consists of butter and sugar.  The Babycakes’ frosting is dairy free and sweetened with agave nectar.  I literally just kept eating the frosting because I couldn’t believe it.  The texture of the doughnut tasted like a cake doughnut which was also so good.  Mind blown.

I’m still in awe of how good everything tasted and how moist the goodies were.  What I love most about Babycakes is that all the ingredients are wholesome ones.  There are no refined sugars or bleached flours so although, I downed a quite a bit of baked goods in one sitting, I felt good about the ingredients I consumed.  Stayed tuned for my own attempt at baking Babycakes’ recipes!
