Every time I go to Whole Foods and pass by the purple potatoes, I’m always in awe of how beautiful they are. Yesterday, I decided to be bold and buy them. I came home with no real plan for them. I thought if I mashed them it would look like scary mashed potatoes and I thought they were too beautiful to be a baked potato. So I decided to make baked potato chips instead of frying to be healthier. I thinly sliced them with a mandolin, tossed with olive oil and salt, and baked them for 15 minutes at 400 degrees. 15 minutes seemed to be enough since I sliced them really thin. The result was a delicious and crispy potato chip that was almost too pretty to eat.
